How goes it?? I’m sure you have noticed by now that I have moved to WordPress! I’m still trying to learn the different ways of blogging on here, but I’m finding it a lot cooler than Blogger, haha
Oh, and I’m sure you have also noticed the new layout! I’m such a copy cat! I actually copied Megan’s layout, but she doesn’t mind
Okay! On to my weekend!
Friday
After leaving work, Jason and I met at the park and ran about 4 miles. It was dark by the time we got out of there at 7:15! This time change stuff is freakin me out, haha
We then came home and I made a scrumptious tempeh stir-fry for dinner.

Asparagus Tempeh Stir-Fry
- 3/4 lb. asparagus spears
- 3/4 cup vegetable broth
- 1/4 cup low sodium soy sauce
- 2 tsp. cornstarch
- 2 tbs. sesame oil, divided
- 1 package of tempeh, thinly sliced
- 4 minced garlic cloves
- 1/2 tsp. crushed red pepper
- 1 (6 oz) package shiitake mushrooms
- 3 cups cooked brown rice <—I used instant
Snap off ends of asparagus. Set aside.
Combine veg broth, soy sauce and cornstarch in a bowl, whisk together until smooth. Set aside.
Heat 1 tbs. sesame oil in a large non-stick skillet over medium heat. Add tempeh, stir-fry until golden (about 4-5 minutes). Remove tempeh from pan, set aside.
Heat remaining tbs. of sesame oil in same pan. Add garlic, red pepper, asparagus and mushrooms to pan, stir-fry until asparagus is tender and crisp (about 3 minutes-ish??) Add broth mixture, bring to a boil, cook until thickened. Add tempeh, cook one more minute or until thouroughly heated. Serve over brown rice!
This meal was sooo good, definitely better than the last time I made it
After my tummy was stuffed, I fell asleep on the couch while watching Deadliest Catch on Discovery.
Saturday
Jas and I woke up at the same time and got started on our chores! We had a whole list of things to do written on the fridge and one-by-one, the list got smaller as the day went on. Our house was sparkly-clean when we got finished (eh hem at 6 PM!!!!) and I was sooooo ready to take a shower for our date night!
Not sure if you know this or not, but I never wear heels. Ever. Not because I don’t want to, but because why am I going to wear heels to work?! And most of the time I am in workout clothes anyway, so this Saturday I saw our date night as an opportunity to “dress up”. Haha

Well, let’s just say wearing heels is a process that I am trying to learn again! We went to dinner at a cute italian place right near the movies, and I literally had to hold on to Jason everywhere we walked because I felt like I’d lose my balance lol. I had to go to the bathroom soooo bad in the restaraunt but the floors were tile and I didn’t want to take the risk of falling into someone’s ravioli, so I held it until we went to the bookstore (where there was carpet!!!!)
Before seeing Zombieland, we ducked into Shoe Carnival where we had time to goof off and dance around in the aisles a lil bit.

Then it was time for the movie!
I was a little apprehensive about seeing Zombieland because I am not one for gore! <—Jason’s pick, haha
But, it was surprisingly funny! There was a lil gore (of course, it’s a zombie movie!) but it made me giggle a few times. Woody Harrelson did a great job in this movie.
I was a sleepy gal when the movie let out at 12, it was home and to bed for me!
Sunday
For some reason, I was up at the crack of dawn and on the computer to fix my website problems (still encountering them!). But, the good part of my morning was this very delicious bowl of oats:

This yumm-a-licious bowl consisted of:
- 1/2 cup oats
- 1/2 c water, 1/2 c skim milk
- 1 tbs. dark chocolate pb
- 2 oz. of POM juice
- strawberries
- flax seed and muesli sprinkled on top
- Stonyfield strawberry yogurt drizzle
Mmmm…my taste buds were very thankful
After that breakfast, the rest of my morning was spent like this:

Add in a few curse words, 3 crying episodes and 1 computer that was almost thrown against the wall…and that completes how most of my Sunday went
I spent 7 hours trying to figure out my new layout! It took 2 calls to Google and 3 to GoDaddy, but now it’s settled. *Sighs in relief* OH, and no laughing at my Lifesaver pajama pants, lol. I was in total comfy mode yesterday, as I am today.
It is currently raining cats and dogs outside, and I am still in my pj’s and loving every minute of it! Jason asked “What are you going to do with your day off?” Ummmmmm, hmmm that’s a hard one…hmmmm uhhhh NOTHING!
There are two other recipes I want to share, but that will have to wait until tonight! One is a soup and the other is a vegetarian naanini <—-big hit with the boyfriend
