Hey guys!
It’s Sunday night and I am feeling soooo lazy
Jason is bowling with his grandpa, I was invited but I declined because nothing seemed more appealing than getting into my jammies!
My day was a tad busy but not very productive at all, haha. I started my morning with a cup of coffee in my new coffee mug! Isn’t soooo cute?!
It was only $3 at TJ Maxx!

Since I’d be stuffing my face at a birthday party, I didn’t want to eat a huge breakfast. So I toasted up some strawberry Kashi waffles, plopped some dark chocolate pb and jam on top, added some sliced naner and Viola! There you have breakfast

I hurried to get dressed and headed out the door for the birthday party. It was Edwin’s (a boy I nanny for) 7th birthday! Before eating, we sat around and made plates:

You like my drawings?? No, sorry. They aren’t for sale. Hehe
Then the food came out! I had a slice of cheese pizza, green beans, corn and mashed taters.

Then, there were seconds of everything (but no pic!). And then there was cake.

My boss always makes the kids’ cakes on their birthday, and they are always great!! She’s a choco-holic just like me
And she was gracious enough to let me take home a peice to Jason, who was stuck at home doing homework
After the party shananigans ended, it was time for me to go home. I came home to pic up Trixie so I could take her on my errands with me. We went to walk in the park and I snacked on an apple in the car afterwards.

We headed to the grocery for a few essentials, then we went back home because it was baking time! I’ve been in a ‘baking mood’ all day…earlier I asked Jas “If I were to bake anything, what would you want me to bake?”. He immediately said: Pumpkin bread!
Pumpkin bread it was! Here is the recipe (adapted from Cooking Light magazine):
Chocolate Chip Pumpkin Bread
- 2 cups canned pumpkin
- 4 egg whites
- 1/2 canola oil
- 1 cup sugar
- 1/2 cup low fat banilla yogurt
- 1 cup semi-sweet choc chips
- 3 cups whole wheat flour
- 1 tsp baking soda
- 1 1/4 tsp salt
- 2 tsp cinnamon

Mix it all up and whatdoya got? Pumpkin bread!!

Well, baking this made me hungry! My hand may have dug into the choc chip bag a few thousand times
I didn’t want to spoil my appetite, so I went ahead and made dinner right afterward. On tonight’s menu: Penne Pasta with Roasted Veggies and Goat Cheese.
I turned the pasta on to boil. Meanwhile, I tossed zuccini, squash and onion in olive oil, garlic, salt and pepper and put them in the oven to roast for about 10 minutes. When the pasta was finished, I used tomato and basil pasta sauce and balsalmic vinagerette to season it. Added the veggies and goat cheese, give it a good stir and then dinner was done!
My bowl:

Please add another bowl
I don’t really know where all of the ‘seconds’ are coming from! Not that they are bothering me, it’s just I think I’ve been doing some emotional eating or something today! Dessert was….you guessed it! Pumpkin bread. Of course, I had to give it a try!

Mmmmmm
It was quite tasty <–If I may toot my own horn a lil’…toot toot
Though I’ve hardly done anything today, I feel so tired and lazy! I am watching Sex and the City and eating more chocolate.

Now, on a more personal note: I’m having a little bit of a dilemma. Remember this post? That was a post about my best friend and I “breaking up” (as you guys liked to put it!). We still haven’t talked, and I have yet to make new friends. Does anyone else find it extremely difficult to make new friends??? When you are younger, it’s easier I guess because your in situations where you can make new friends..but being older…I’m feeling a bit akward when it comes to making new friends!
And not to self-loathe or anything, but Jason is the only person I ever hang out with. (Haven’t you noticed?? Haha
I love him to death and love being with him, but sometimes it’d be nice to have a friend to talk to…GAAHHH I feel like such a dork posting this! Do you guys have any advice for me? Ugh. Okay, I am now ending this post because it is utterly embarrasing!
See you in the morning!

oh my gosh, I need to make that pumpkin bread now! It looks so good!
About the friends thing, i’m with you!! I just started grad school last year and quickly went from being extremely social to a program with 8 people who all have their own life and aren’t looking for “friends.” It is tough, and I can feel your pain! Solution: Either I move to you or you move to me and we can be friends!! Hahah! That’s one reason why I read blogs, there are certain girls I feel close with! It’s strange how that works!
Stace,
Hope this helps.
It is harder to make friends once you grow up. It comes easily when you are younger. However, I know your life is crazy between work and school right now. My advice to you is join a book club. Your library sponsors some and the books a million sponsors one. You’ll meet other women while reading, and maybe hit it off with them. I’m in a book club and even though it only meets once a month, we have a blast. I get together with several of them to do things outside the club. Maybe that could be a place to start. I’m like you, my best friend is Ed, but he doesn’t get all the girly stuff
Love the mug!
That pumpkin bread looks sooooo delicious–ugh there are SO many things I want to make this season!
Hey lady! I completely know what you mean about wanting to expand your friend base and having a hard time with it. I’ve always really been a one friend kind of gal. I’m pretty quiet and so sometimes have a hard time in bigger crowds. I think just trying to extend yourself and maybe do things you wouldn’t normally is a good way to meet new people. Are there a lot of gals in your classes? Maybe asking them to have lunch or study could be a good idea!
Anywho, great looking eats yesterday! I hope that you had a great day today!
Stacy! Call ME!!! My bff and I ‘broke up’ too.
I think it’s just part of growing up, but it’s SO HARD.
Anyway, your punkin bread looks FANTASTIC, and I love your new wordpress layout.
Have a great day, hon!
the older you get the harder it is to make new friends. i’m happy to be moving back to where all of my old friends from college are. you get to meet new people with common interests, like church or a running club meeting. or work. or people you used to work with. that’s my extent.
I, too, find it tough to make new friends. Especially now that I’m older and out of college, it’s difficult to connect with people. I hang out with my boyfriend a LOT. And of course I enjoy that, but sometimes I wish I had a solid group of girlfriends. A lot of my close girlfriends don’t live by me, and we’ve grown more distance because of it.
On a different note – I’ve been in a baking mood all day today TOO! I’m going to go home and make some blueberry muffins. =D
It can be sooooooo hard to make new friends as you get older. Have you thought of joining a local running club where perhaps you could meet people? What about a young Women’s Club in your area, or Junior League? Or even take a local art class or photography class or something… or a cooking class? Those might be places where you could meet new people.
[...] did the dishes, lol. Seeing as how we were both in a hurry to rock out, I made a quick dinner of Penne Pasta with Roasted Veggies and Goat Cheese. [...]
