(I’d like to go ahead and apologize for this post being a little scattered! It’s about 6 am, and I just woke up
But I’ve missed you guys so I wanted to post before school!)
Sorry for being M.I.A. last week, but it was a very busy one!
Thursday was our 2 year anniversary
I woke up to this message on the fridge:

That made it much easier to get through work….I’ve got the sweetest guy ever
We celebrated by drinking beer and cozying up on the couch to watch First 48 together for most of the night…which, in my opinion, is a perfect night.
(Haha. Please excuse that guys mugshot in the background!)
Friday went by uneventfully. We worked on some strength training at the gym after work. Here is what I have done this week:
- Total Mileage: 10 (running, of course!)
- A BUNCH of strength training, I will try to remember it all: 25 lb. bicep curls, 55 lb. chest press, 45 lb. military press, bench dips, bicycle crunches, crunches with an exercise ball, 25 lb. v-flys, 55 lb. lat pulldowns…….I think that’s it!
I have been increasing the amount of weights that I am lifting so I can get more strength and definition in my arms, and boy…let me tell ya, I am sore when I get through. But, a good kind of sore
Okay! On to a more exciting day!! Saturdayyyyyyyy!!!!!!!!!!
Saturday=Black Eyed Peas concert. ‘Nuf said.
We started our busy morning with coffee….
…and while pouring, I thought to myself: “Wouldn’t coffeecake go best with coffee???” Especially blueberry coffee cake?
Hmmm just so happens I have blueberries in the fridge. What a coincidence
Ladies and gentlemen (?), I give you blueberry coffeecake:

That picture should be X-rated. Seriously guys, when this came out of the oven, I wanted to smuggle it under my shirt and take it to a secluded part of the house so I could have it all to myself…..but I had to share.
It’s very simple to make! Here are the ingredients:
- 1 cup all-purpose flour
- 1/2 cup sugar
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 2 tablespoons butter, melted
- 1 cup fresh blueberries
- 2/3 cup vanilla soymilk (or you can use buttermilk)
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1 large egg
- cooking spray
- 1 tablespoon brown sugar
- 1/4 teaspoon cinnamon
Preheat oven to 350. Combine first 5 ingredients in a bowl, mix together. Add 2/3 cup blueberries and toss. Combine milk, egg, butter, vanilla and almond extract in a bowl, stirring with a whisk. Add wet mixture to dry mixture until moist.
Spoon batter into an 8 inch square baking dish coated with cooking spray. Top with remaining blueberries. Combine cinnamon and brown sugar in a small bowl, then sprinkle over top of blueberries. Bake for 35 minutes. That’s it!
Sometimes I sprinkle almond slices on top of the coffeecake, but we didn’t have any so I just skipped it

I absolutely hated it.
Jas and I spent most of the morning doing errands, homework and cleaning the house. We decided to break for lunch around 1. I wanted something quick and easy so we could get ready to go to Charlotte. And this was staring at me when I opened the cabinet door:
Add some spinach and black eyed peas (it seemed only fitting!!) and you have a meal!
There were other various snacks throughout the day, but for times sake I am going to skip them! Ya know, just so I can leave room for the good stuff
Jason and I went to a few places in Charlotte to take up time before the concert, we decided to have an early dinner at Big Daddy’s Burger Bar.
I started my meal with a Blue Moon:
Then the food came! I made my own salad with spinach, avocado, chickpeas, cucumbers, strawberries, tomatoes and tortilla strips.
I promise there is a salad under there!
And of course I can’t go there without getting their sweet potato fries
Nom nom nom. Jason had to help me finish these off!
After eating, we went to find parking for the concert and I am so glad we did because the line to the arena was out of the door and almost all the way down the block!!! The tickets said to not bring cameras in, though everyone did anyway..we played by the rules and left ours in the car..but not before taking a quick pic of us to show how excited we were!!

Everyone else did. Let me just say the show was A-MAZING. It included a flying motorcycle, a freestyle rap by Will.I.Am and speaker/robot costumes. The newspapers were saying that it was going to be the “ultimate dance party”. It was!!!!! We were on the second level and could look across the entire stadium and there wasn’t one person that wasn’t dancing!
They are so talented you guys. Fergie sounds even better in concert than on the radio, and they had great special effects. They played all of my favorite songs, ending with “I Gotta Feeling”..I was dancing my booty off. No really, I think I danced it off. It must be still in the bleachers somewhere
At the end of the song, thousands of pieces of confetti shot into the air, it was almost magical haha. It. was. great. And though Jas and I pride ourselves on being die-hard rock fans, it’s nice to go see a group I can move to
Alice in Chains concert is next!
After the concert, we lazily headed back to the car. My legs were sore from dancing in heels all night and I was ready to go to bed! It was such a great Saturday, and the Black Eyed Peas did not dissapoint.
Sunday was a little more laid back. The weather was awesome, so Jas and I got to the park to walk Trixie:

After our nice little walk, the rest of my day had to be devoted to Algebra. ICK. But oh well! That’s the way life is. I had enough fun Saturday to last me for a good, solid week
Gotta get ready for school! I gotta feelin’…that today is gonna be a good Monday

Looks like a GREAT weekend! I’m jealous about the Alice in Chains concert! They are coming to House of Blues in Myrtle Beach (15 mintues from my house!) and I procrastinated getting tickets and it’s competely sold out. Boo!
